Ingredients

- 1 cup paneer crumbled / approx 200gm
- 1/2 cup soya granules
- 1/4 cup wheat dalia fada lapsi / buckwheat
- 1 tsp dried green chilli powder or 1 tsp red chilli powder (see recipe notes)
- 2 tsp garam masala
- 1 tsp sauf variyali / aniseeds powder
- 1 tsp cumin seeds powder roasted
- 1 tbsp coconut dried & shredded (optional)
- salt to taste

- 1 cup white peas dried
- 1 tsp garam masala
- 1 tsp red chilli powder
- 1 tsp dhanyajeera powder
- 1 tsp cumin seeds powder roasted
- 1/2 tsp turmeric powder
- 1/2 tsp cumin seeds
- 3-4 curry leaves dried
- 1 bay leaf tej patta
- 1 tsp aamchur powder or 1tsp imli paste (tamarind paste)
- 1/2 tsp hing asafoetida
- salt to taste

Instructions
for pattice
- Soya granules.
- Crumbled paneer.
- Buckwheat / wheat dalia / fada lapsi
- Wash the soya granules and place it in hot water for 20-25 minutes. After that, squeeze out the water and keep it aside.
- Wash the wheat dalia and place it in a top with 1/2 cup water. Cover the lid, then place it in a cooker and cook for 2-3 whistles. Keep it aside.
- Take one bowl and crumbled paneer, soya granules, wheat dalia and all the remaining ingredients. Mix it well.
- Take a small portion of the mixture, and mould it into pattice shape.
- Take a frying pan, put some oil in it and then arrange the pattice keeping some space between each. Roast on both the sides or until golden brown.

- Wash and soak the dried peas for 5-6 hours
- Then cook in pressure cooker for 5-6 whistles or until the peas turn soft. Do not drain the water. Use it when required ahead in the recipe.
- Heat oil in a kadai. Add cumin seeds. When they start to crackle, add curry leaves, bay leaf, hing, and all the remaining masalas and cook for 1-2 minutes.
- Add cooked peas, along with the water and add aamchur powder.
- Mash the peas with the back of a spoon to make the mixture thick, add 1 & 1/2 cup of water and mix well. Cook on a low flame for 8-10 minutes or until it turns thick.
- Place the patties on a serving plate. Pour the ragda over it. Top it with sweet chutney, sprinkle some sev and chaat masala.
