Ingredients
for pita bread
- 1 cup maida or wheat flour
- 2 tbsp thick malai
- 2 tbsp thick curd
- 1 tsp margarine
- 1/2 tsp baking powder
- 1/2 tsp sugar
- salt to taste
- water as per your requirement
for veg falafel
- 1 cup chickpeas
- 3 green chillies
- 1 tsp roasted cumin seed powder
- salt
- 2 tbsp chopped celery
- 1 tbsp chopped parsley
for green chutney
- 1 cup chopped coriander
- 6-7 soaked chick peas
- 1 tsp lemon juice
- 3-4 green chillies
- salt to taste
for red chutney
- 2 tomatoes
- 3 Kashmiri chillies
- salt to taste
- 1 tsp vinegar
for tahini paste:
- 2 tbsp white sesame seeds roasted
- 1 tbsp olive oil
- salt to taste
- water
for salad
- iceberg chopped
- green - red cabbage chopped
- bell peppers all three colours, chopped
- tomato chopped
- jalapeno

Instructions
for pita bread
- Mix all ingredients and make a smooth dough, rest it for 3 hours.
- After kneading well, roll it into oval shape and bake in preheated oven on 110°C for 10 minutes or bake on a tava till both the sides are done.
for veg falafel
- Wash and soaked chickpeas for 5 to 6 hours.
- Put chickpeas, green chilli, cumin seeds powder and salt into a grinder and grind them. Now add celery, parsley to your grind and make falafel balls, after which you can fry it.
for green chutney
- Grind and make smooth paste.
for red chutney
- Boil tomatoes and Kashmiri chillies in 1 cup water, till it turns soft or boil it for 5-7 minutes.
- Cool and grind it, after that add salt, vinegar and boil it for 2 minutes.
for tahini paste
- Grind and make smooth past.
how to proceed
- Cut the pita bread in half. Take one half of it and open it like a pocket, now add both the chutney, falafel, hummus and salad.
- Ready to eat...........
